Three weeks down. So close.
We woke up to a power outage, which made me panic. HOW WILL I COOK MY EGGS???
I scavenged together the best breakfast I could without opening the fridge.
It took the hunger edge off but didn’t fill me up. I was about to head out to Starbucks when the power came back on. I made my coffee and then fried an egg and had some spinach.
Lunch – we went to a friend’s house for lunch and I packed my lunch. I was not going to make them cater to me. They got Popeyes (fried chicken) which was fine by me. I am not a fan of fried chicken after eating it a bazillion times on tour with the African Children’s Choir. Southern people literally eat nothing else. NOTHING. After three months in the south, I could not handle another piece of fried chicken. Like, ever. It’s been over ten years and I still can’t eat it.
So while they enjoyed their chicken, I enjoyed my arugula, pear, prosciutto salad. (It was so good I made it a second day.) They also made me a sweet potato, which was sweet. I did envy their biscuits.
Dinner – I had leftover chicken and tomato sauce, so I paired that with some brussels sprouts (told you I loved them) and potatoes.

I’m getting better about cooking without a specific Whole30 recipe.
