Whole 30 – Day 20

I think I caught a bit of energy on Day 20. My house is really clean now. It may have had something to do with getting nine hours of sleep too. I love Saturdays.

Breakfast – scrambled eggs, spinach, blueberries.

Lunch – I decided to make a salad that I had seen on the Whole30 recipes Instagram story. It was simple and easy. Arugula, pear, and prosciutto. Drizzle olive oil and balsamic vinegar. (It was supposed to have almonds, but I couldn’t find them in the pantry. I promptly found them as soon as I was done eating.)

I was surprised at how much I liked this salad. I’m not a big arugula fan. It’s really bitter. But paired with the sweet pear and the salty prosciutto, it was really yummy.

Dinner: Zucchini noodles, tomato sauce (made with canned tomatoes, fresh basil, and other herbs), and chicken.
