Whole 30 – Day 11

I wish I had some witty words for today, but I just don’t. Here were my meals for today.

Breakfast: same as yesterday. Eggs, potatoes, and butternut squash. Hate to get in a rut, but I had butternut squash to finish.

Mid morning snack of strawberries and blackberries.

Lunch was the rest of my brussels sprout salad from yesterday. Protein was canned salmon. A pear.

Dinner was not so great. I made this recipe. I don’t know when I will learn that I am just not a pork fan. I try to mix up meals and every few months I’ll try pork again. Every time I’m not impressed. It’s got to be smothered in barbecue sauce to be tolerable, which isn’t an option on Whole30. So I ate dry pork, and I just couldn’t stomach much of it.

I made cauliflower rice, which we had last week and was pretty good. I found a bag of “riced cauliflower” at Trader Joes and figured it would save a step in prep. IT WAS NOT GOOD. If you’re going to make cauliflower rice, fresh is the way to go. I ate about three bites and was done.

And I was running out of veggies for the side. I had one zucchini, so I chopped it and sautéed it.

After dinner, I was still hungry so I ate a banana and then nuked a small potato. And I’m still hungry. No more pork for me.

Whole 30 – Day 10

We had a late night last night, so I didn’t get around to posting. Open mic comedy night, which means home close to 11:00 pm.

For breakfast, I had some produce to use up. I bought a bag of butternut squash at Trader Joe’s. I nuked it then poured some clarified butter on top. Eggs and potatoes to go with it, and some kiwi that I ended up taking as a snack for later.

Lunch was a brussels sprout salad. I LOVE brussels sprouts. I never ate them as a kid because my dad hated them. I think I first had one at the age of 26. I thought they were pretty tasty and I learned that when they’re sautéed with a little salt and pepper, they are amazing. Crispy goodness.

When I saw a recipe for a brussels sprouts salad, I had to give it a shot. I found shredded brussels sprouts so that cut out a step. I left out the onion and dried cherries and threw in an avocado. I made the dressing with a fresh orange and lemon and it was pretty tasty. Forgot the orange zest. Threw out the peel. Oops. Tuna on the side for protein.

Afternoon snack of a pear and a few slices of prosciutto.

For dinner I had some leftover chicken soup. We were headed to Bird’s for comedy night. We usually split a burger and I gorge myself on a basketful of fries. Not exactly Whole30 compliant. I thought about trying to order the grouper sandwich minus the sandwich. But the only side options are fries and onion rings. I could have had grouper with a side of tomato but that didn’t sound filling. So I just ate before we went and watched Drew eat a burger. Super fun.

The other problem was no alcohol. Open mic comedy night can be sometimes painful. The not so great sets are easier to get through with a glass of hard cider. Some of those people just aren’t that funny when you’re sober. At least Drew still made me laugh.

Whole 30 – Day 9

Tuesday, May 9th, 2017

I’m starting to get to the “Whole 30 is stupid. I don’t waaaaant to cook anymore!!!” stage.

Another low energy day. I was also hungry. I doubled up my protein at lunch but was still hungry two hours later. I think part of it is my reflux healing. Sometimes I can’t tell if I’m hungry or if I”m having reflux. Hoping it starts to get better soon.

Breakfast was scrambled eggs, chopped up (Whole30 compliant) hot dog, and blackberries.

Lunch was a salad with a whole can of tuna and a whole avocado.

Dinner was a slightly varied version of this recipe. (Thanks Elizabeth!) I subbed broccoli slaw for the cabbage (not a huge cabbage fan) and shrimp for the chicken (we had chicken last night). I told Drew it was like shrimp fried rice…with no rice. It was quick, which I liked. I’m running out of energy for timely meal prep.

Whole 30 – Day 8

Monday, May 8th, 2017

I’m starting to envy the hummingbird’s sugar water.

My energy was really low today, maybe partly because of not sleeping so well. I also had some pretty bad heartburn. I’ve  had persistent reflux and heartburn in recent years, so this isn’t unusual. After a google search, I found that it’s common for heartburn sufferers to get worse before getting better on Whole30. I chugged a lot of water and sipped some tea and it got better.

No pictures today, cause I’m tired and how many flipping pictures of potatoes and eggs can I take?

Breakfast: Fried eggs, potatoes, tomato, and a side of blackberries. Also, coffee with coconut cream and a dash of cinnamon. Mid morning snack of a banana.

Lunch: Chicken soup that I made yesterday. All that simmering helped. The chicken was super tender. Soup’s a little hot for summer, but good for the soul.

Dinner: Crock pot chicken with garlic and lemon. Simple. And even though I’m getting sick of them, I roasted potatoes to go with it. Broccoli, carrots, and cauliflower for the veggie.

Early bedtime for me tonight.
