Whole 30 – Day 19

Friday, May 19th, 2017

Still tired. Also, so many people report having clearer skin while on Whole 30. Me? I’m breaking out. I’ve got two zits that will. Not. Go. Away.

Breakfast: Eggs, potatoes, spinach.

Lunch: Tuna. Salad with avocado. I finished off my homemade ranch. Blueberries.

Dinner: Prosciutto. Brussels sprouts. Sweet potato.

I would like to thank my father for never serving me brussels sprouts as a child. I think by not having them until I was in my 20s, I was able to grow a love for them. Seriously, they are one of my favorite veggies. You have to cook them right. If you plop them in a pot of water and boil them into mush, then yes, they suck. But if you sauté them or bake them until the leaves are crispy and brown, then yum. And pair them with prosciutto… YUM.

 

Whole 30 – Day 18

Friday, May 19th, 2017

Day 18 was another Whole 30 is stupid and I hate everything days. I had super bad reflux (when will this end???) and I managed to pull a muscle in my chest (who does that?) in my sleep (who does that????). I woke up with chest pain, which immediately made me think, “Whole 30 is literally killing me. Am I having a heart attack?” I googled chest pain (don’t ever do that) and determined I was either indeed dying or everything was just fine.

I am just fine for the record. It was a combination of reflux (every time I burped I felt better) and weird pulled muscles (it hurt worse when I turned a certain way).

Breakfast: fried eggs, potatoes, spinach, and avocado. Banana for a mid morning snack.

Lunch: I finished off the breakfast casserole. Apple.

Dinner: I was on my own, cause Drew went to a Pampered Chef party. I was supposed to go but since I felt like crap I stayed home. I made some plantains, shrimp, and a side salad. The plantains were especially yummy.

Whole 30 – Day 17

Wednesday, May 17th, 2017

I can report that I am STILL feeling tired and I STILL want a cookie. Seriously, the exhaustion and fogginess hit me hard this morning. I was having a hard time focusing at work and was feeling a little cranky. I fought the urge for a second cup of coffee and indulged in herbal tea instead.

Breakfast- fried egg, potatoes, spinach. Banana about an hour later.

Lunch – leftover roast from Monday night. A big salad with no dressing cause I forgot my homemade ranch (wah wah). An apple.

Pre dinner snack (I had to take my nephew to karate and knew I would need a little something): Olives. Almonds. Blueberries.

Dinner: Cilantro lime chicken in the crock pot. Cauliflower rice (made fresh this time. Much better). Sugar snap peas and spinach.

I am also still having reflux issues, which I am really ready to be done with. Anytime, Whole30. Anytime.

Whole 30 – Day 16

Wednesday, May 17th, 2017

Not much to report on this day. In the morning, I felt pretty awake and alert, and even noticed that my head felt less “foggy” than it sometimes does… but that was short lived. By mid afternoon, I hit an energy slump.

No pictures either. I’m tired of snapping shots of my food.

Breakfast: casserole from Sunday. Blueberries. Banana.

Lunch: leftover spaghetti squash and chicken from Monday night. Apple.

Dinner: sautéed potatoes, broccoli, and cauliflower with chicken and apple sausage.
