Whole 30 – Day 23

Tuesday, May 23rd, 2017

This was not a good day. I woke up super groggy and tired. I didn’t plan my meals well and I was hungry all day. I texted a friend who has done Whole30 in the past to ask if it was normal to feel this tired and foggy so far in. Of course, there is no right answer cause everyone’s experience is so different. Really I just wanted to complain about how grumpy I felt and how I wanted a damn cookie. She offered to meet me after work for tea so I could vent, but I ended up canceling cause I needed to go grocery shopping. I was so flipping hungry and I wouldn’t be able to eat any of the tempting pastries at the coffee shop. (Sorry Kathryn!) She texted me to check in after dinner. She’s so sweet.

I hated having to go to Publix after work cause I was so tired and grumpy. I did it though, and I binge shopped the produce section rather than the candy aisle.

Breakfast: more sweet potato toast. Not so great today, I think because it was sliced too thick. Needed to cook a little longer. I was running late and didn’t have time to make anything else, so breakfast didn’t last long.

Lunch: Full can of tuna, salad, potatoes.

Dinner: I improvised a chicken stir fry with broccoli and bok choy. First time I’ve cooked with bok choy. I was too tired and hungry to take pictures, but it ended up pretty tasty.

Whole 30 – Day 22

Tuesday, May 23rd, 2017

Another tired day. More heartburn and reflux. I did have a near viral tweet. Well, as viral as I’ll ever get. The Whole30 twitter page retweeted me, and things got *crazy* after that.

Breakfast: I tried sweet potato toast (slice sweet potato thin and toast!) and it was pretty good. I topped it with poached eggs and a side of spinach.

Lunch was another pear prosciutto salad. My avocado was bad, as evidenced in my viral tweet. So sad.

Dinner was a re-run from Friday night. Brussels sprouts and prosciutto and butternut squash. I fried an egg for a little extra protein.

Whole 30 – Day 21

Three weeks down. So close.

We woke up to a power outage, which made me panic. HOW WILL I COOK MY EGGS???

I scavenged together the best breakfast I could without opening the fridge.

It took the hunger edge off but didn’t fill me up. I was about to head out to Starbucks when the power came back on. I made my coffee and then fried an egg and had some spinach.

Lunch – we went to a friend’s house for lunch and I packed my lunch. I was not going to make them cater to me. They got Popeyes (fried chicken) which was fine by me. I am not a fan of fried chicken after eating it a bazillion times on tour with the African Children’s Choir. Southern people literally eat nothing else. NOTHING. After three months in the south, I could not handle another piece of fried chicken. Like, ever. It’s been over ten years and I still can’t eat it.

So while they enjoyed their chicken, I enjoyed my arugula, pear, prosciutto salad. (It was so good I made it a second day.) They also made me a sweet potato, which was sweet. I did envy their biscuits.

Dinner – I had leftover chicken and tomato sauce, so I paired that with some brussels sprouts (told you I loved them) and potatoes.

I’m getting better about cooking without a specific Whole30 recipe.

Whole 30 – Day 20

I think I caught a bit of energy on Day 20. My house is really clean now. It may have had something to do with getting nine hours of sleep too. I love Saturdays.

Breakfast – scrambled eggs, spinach, blueberries.

Lunch – I decided to make a salad that I had seen on the Whole30 recipes Instagram story. It was simple and easy. Arugula, pear, and prosciutto. Drizzle olive oil and balsamic vinegar. (It was supposed to have almonds, but I couldn’t find them in the pantry. I promptly found them as soon as I was done eating.)

I was surprised at how much I liked this salad. I’m not a big arugula fan. It’s really bitter. But paired with the sweet pear and the salty prosciutto, it was really yummy.

Dinner: Zucchini noodles, tomato sauce (made with canned tomatoes, fresh basil, and other herbs), and chicken.
