Whole 30 – Day 17

I can report that I am STILL feeling tired and I STILL want a cookie. Seriously, the exhaustion and fogginess hit me hard this morning. I was having a hard time focusing at work and was feeling a little cranky. I fought the urge for a second cup of coffee and indulged in herbal tea instead.

Breakfast- fried egg, potatoes, spinach. Banana about an hour later.

Lunch – leftover roast from Monday night. A big salad with no dressing cause I forgot my homemade ranch (wah wah). An apple.

Pre dinner snack (I had to take my nephew to karate and knew I would need a little something): Olives. Almonds. Blueberries.

Dinner: Cilantro lime chicken in the crock pot. Cauliflower rice (made fresh this time. Much better). Sugar snap peas and spinach.

I am also still having reflux issues, which I am really ready to be done with. Anytime, Whole30. Anytime.

 

Whole 30 – Day 16

Not much to report on this day. In the morning, I felt pretty awake and alert, and even noticed that my head felt less “foggy” than it sometimes does… but that was short lived. By mid afternoon, I hit an energy slump.

No pictures either. I’m tired of snapping shots of my food.

Breakfast: casserole from Sunday. Blueberries. Banana.

Lunch: leftover spaghetti squash and chicken from Monday night. Apple.

Dinner: sautéed potatoes, broccoli, and cauliflower with chicken and apple sausage.

 

Whole 30 – Day 15

I’M HALFWAY THROUGH!

I’m still waiting for “Tiger Blood” to kick in (basically boundless amounts of energy), but I did have a bit more energy today. According to the Whole30 timeline, Tiger Blood should kick in any time now. Right now I’m craving chocolate chip cookies, cause today is apparently National Chocolate Chip Day. And I forgot that I follow Cookie Monster on Twitter, which may not be a good idea right now. He was all celebratory today and I’m just over here munching on carrot sticks.

I was talking with a friend this weekend who actually wanted to hear all about my dietary adventures. She asked if I was tired of talking about it, and I told her no. It’s basically been ALL I think about (What will my next meal be? Does that have soy in it? Oh crap, am I out of coconut aminos??) so it was nice to have someone who was willing to hear about it. I figure most people are like, “Shaddup, don’t care about your veggie consumption.”

I told her one benefit I had seen so far is that I’ve been sleeping better. At least, falling asleep easier. I’m the type that will lie awake, calculating how much sleep I could get if I fall asleep RIGHT NOW but now I’m stressing myself out because I’m not falling asleep and did I sent that email and what should I wear tomorrow if I throw my hair in a ponytail I won’t have to wash my hair in the morning and what if world hunger is never solved my foot itches why am I congested and why am I not asleep yet????

Since about day three or four, I’ve noticed I’m falling asleep with a lot less effort. I still wake up through the night (I toss and turn a lot according to my Fitbit sleep tracker) but I really think I have been more rested. I guess getting that sugar out of your system does help.

So today’s meals:

Breakfast: the breakfast casserole I made yesterday along with some blackberries. Yum. Also, I am greatly enjoying my coffee with coconut cream (from the can) and a small sprinkle of cinnamon. I look forward to my coffee every day.

Lunch: leftover roast beef and green beans. And some carrot sticks and sugar snap peas dipped in ranch. And an apple.

Dinner: This creative dish. I was eager to try something with spaghetti squash again once I discovered how easy it is to prepare. I substituted chicken for the bacon cause I haven’t found compliant bacon. Which is probably fine cause it’s supposedly super expensive and I’ve already spent about $30,000 on groceries this month.

Some other thoughts… still having issues with reflux. But then, I had two cups of coffee yesterday and today, so that might have something to do with it.

I found myself feeling hungry mid morning, which again I think could be reflux. I busied myself at work and next thing I knew it was lunch time and I’d barely thought about food. I’m probably not as hungry as I think I might be.

 

Whole 30 – Day 14

I let myself get hungry today, and thus grumpy. I think my period isn’t helping.

Breakfast: scrambled eggs, spinach, and a handful of berries.

I also had a second cup of coffee, cause I was kind of feeling grumpy. And more coffee always helps.

Lunch was some leftover pork smothered in ranch, olives, carrots, and sugar snap peas.

Dinner was in the crockpot. Balsamic roast beef, mashed sweet potatoes, and sautéed green beans and mushrooms. The beef was pretty good, and would have been even better if it had a couple more hours in the crackpot. The flavor was good, but the meat could have been a bit more tender. The sweet potatoes were heaven.

Earlier in the afternoon, I did some meal prep and made breakfast for the week. I found this breakfast casserole and I’m pretty excited about it.
