Whole 30 – Day 3

I’ve had more energy today which is good, cause I spent A LOT of time cooking.

Breakfast was poached eggs, potatoes, and avocado with blackberries. I got to use my cute little poach pods.

Lunch was dinner leftovers. It was nice to get a break from salad.

After work I had to head to New Leaf Market, the local co-op grocery store to pick up some weirdo ingredients that I couldn’t find at Publix. I always walk into New Leaf like I know what I’m doing, when in reality I usually don’t know where anything is. Especially not the coconut aminos. I had to google to figure what the heck that was. It’s basically a soy sauce substitute.

Drew got a kick out of the ingredients. “Sun dried sea salt? That’s basically evaporated sea water.”

Dinner was mango chicken with coconut cauliflower rice. Time consuming, but pretty good. The mango sauce was yummy and cauliflower rice isn’t too bad. Drew finished his plate, so it couldn’t have been that bad. He commented after dinner, “I’m still alive…”

I have enjoyed cooking from scratch. It does take more time but I enjoy the process.

Whole 30 – Day 2

Tuesday, May 2nd, 2017

No dreams on day 2, but if I see ONE more commercial for milkshakes…

The energy I felt yesterday is definitely waning. I felt very sleepy in the afternoon. I tweeted this. I guess this what’s called “the detox.” I fully intend to see this through to the end, and know that better days are coming. But DAMN, the Reese’s cups were calling my name at the Publix checkout. I left with only potatoes, tomatoes, and chicken stock. VICTORY!

Someone asked me today on Facebook to explain what wasn’t allowed on this crazy thing. The full list of rules are here, but basically:

  • No sugar in any form. This includes alcohol.
  • No dairy.
  • No grains.
  • No legumes.
  • No processed foods.

Breakfast was scrambled eggs with potatoes and fruit. I tried coconut cream in my coffee and it was pretty tasty. But also chunky. Mental note to shake well tomorrow. Also, I will need to start making some Whole30 approved sauces. Because the potatoes were DRY.

Banana around 11:00 am for a snack. Lunch was another salad, with strawberries and avocado. Salmon on the side. No picture, cause how many pics of salads do I need?

I struggled through the afternoon, fighting off sleepiness. Apple for a snack.

Dinner was a shrimp and sausage skillet. It was colorful and pretty. I used this recipe and added potatoes. I was surprised that I actually found a sausage I like. It was a chicken apple sausage from Aidells. I normally hate sausage in any form, but this was pretty good. I also have leftovers, so no salad for lunch tomorrow.

Whole30 – Day 1

Monday, May 1st, 2017

Day one of my Whole30 experience began with a dream. Someone handed me a biscuit and I immediately shoveled it into my mouth.Then I remembered, “Oh wait…” and felt remorse (and stupidity) over my already failed dietary experiment. (I felt quite relieved when I woke up.)

I kept breakfast simple. (No biscuits.) Three scrambled eggs with spinach. A heaping bowl of berries. Black coffee.

I was pleasantly surprised by the black coffee. I’ve drunk coffee black before, but I do prefer it with at least a bit of half and half. Without sugar and cream I was able to focus on the taste of the coffee. I also found that with three eggs, I stayed full pretty much all morning. I had a banana at 11:00, which kept me going until lunch at 1:00. Usually, I eat a small breakfast and I’m hungry at about 9:30. I felt more focused. I did crave a second cup of coffee but I opted for a cup of tea instead. It was a nice treat.

Lunch was a salad with salmon and a sweet potato. I nuked the sweet potato and it didn’t turn out great.

I had an apple about three and I was definitely ready for dinner when I got home. I had a crockpot meal planned and the house smelled AH-MAZING. I attribute it to the garlic.

This recipe was really good. Lots of garlic, oregano, and basil. I paired it with roasted potatoes. YUM-MY.

So far so good. I don’t feel like killing anyone for a cookie, but it is only day 1.
